Recipe of the Month: Tomahawk Steak

Diners often ask our sous chef, Brett Beavers, how to recreate the magic of Jack’s tomahawk steak at home. With a thermometer as your wand, use this recipe to enchant your family and friends.

1. Before cooking, bring your tomahawk steak to room temperature.

2. Preheat your oven to 500°F and grill or grill pan on high.

3. Season steak well with salt and pepper.

4. Place steak on grill, sear, and rotate one quarter-turn. Flip steak and repeat.

5. Using thermometer, track the temperature of the steak according to desired level of doneness:

	Rare - 120°F
	Medium Rare - 130°F
	Medium - 135°F
	Medium Well - 140°F
Well Done – 145°F or More

6. Remove steak from grill when it’s 5°F beneath desired level. Finish in oven for 5 minutes or until steak is at target temperature.

7. Remove and let rest at room temperature for at least 5 minutes.

8. Finish steak with butter and serve immediately.

Honoring Jack Kennedy at Jack’s Place

This month, we’re celebrating the birthday of John F. Kennedy, the 35th president of the U.S., born May 29, 1917.

The first president born in the 20th century, “Jack” Kennedy ushered the country into a new era with his civil rights reforms and support of the space program. In word and deed, JFK inspired Americans to serve their country in the world. Two months into his presidency, he established the Peace Corps. Like Jack Rosen, Jack Kennedy loved to draw — the JFK Presidential Library holds a collection of his doodles.

Dine with JFK at table 40 or 41. Caricatures of wife Jacqueline and brother Robert also hang at Jack’s Place.

Meet The Team

Dani Torres

You could say that Dariana “Dani” Torres was raised in the Rosen culture. Dani, who is proudly of Argentinian and Puerto Rican descent, grew up in Orlando. Her mother worked for our Guest Relations team while pregnant with her. Today, Dani looks forward to expanding her hospitality skillset by studying at UCF’s Rosen College of Hospitality Management.

Dani has only served as the host at Jack’s Place for a few months, but in that time has become the heart and soul of our restaurant. Diners and management alike admire her friendly demeanor, organization, and tremendous attention to detail. Outside of work, she loves to spend time with her family and her two dogs, Joey and Emma.
